Homemade biscuits that rise tall, bake golden, and taste like comfort.
Ingredients
- 2 cups all-purpose flour
- 1 ½ tablespoons baking powder
- 1 teaspoon sugar
- ¾ teaspoon sea salt
- ½ cup unsalted butter (grated or cold and cubed)
- 1 cup half-and-half or whole milk
- ½ tablespoon melted butter (for brushing)
Instructions
- Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and sea salt.
- Cut in the butter: Add grated or cubed cold butter into the dry mixture. Using a pastry cutter or your fingers, gently work the butter in until the mixture resembles coarse crumbs with pea-sized bits of butter still visible.
- Add milk: Pour in the half-and-half (or whole milk). Stir just until the dough comes together—don’t overmix.
- Roll and fold for layers:
- Turn the dough onto a lightly floured surface.
- Roll it out to about ½–1 inch thick.
- Fold the dough top to bottom, then roll out again to ½–1 inch thick.
- Repeat this rolling and folding process 2–3 more times. You should still see little specks of butter in the dough—this is what makes them flaky!
- Cut biscuits: Using a biscuit cutter or a floured glass, cut out biscuits and place them on the prepared baking sheet. Gather scraps, re-roll gently, and cut again.
- Bake: Place in the oven and bake for 10–12 minutes, until the tops are golden brown and biscuits are puffed.
- Brush with butter: As soon as they come out of the oven, brush the tops with melted butter for extra flavor.
- Serve warm with jam, honey, or gravy—and enjoy those buttery layers!
