Italian Sausage and Tortellini Soup

Ingredients
- 1 lb Italian sausage
- 1 small onion, chopped
- 2 cloves garlic (or 1 Tbsp jarlic)
- 6 cups chicken broth (¼ cup chicken base + 6 cups water)
- 1 Tbsp basil
- 1 tsp oregano (or 2–3 tsp Italian seasoning)
- 1 (28 oz) can petite diced tomatoes
- 2 carrots, grated
- 1 cup frozen peas
- 12–14 oz ravioli or tortellini
- 1 cup heavy cream or half-and-half
Instructions
- Brown sausage (leave chunky). Drain grease.
- Add onion + garlic, sauté 5 min.
- Add broth, tomatoes, carrots, and herbs.
- Bring to a boil, then simmer 15 min.
- Add peas + ravioli, cook 5–8 min.
- Stir in cream and simmer a few minutes more.
- Serve hot with parmesan + crusty bread.
