Ingredients

  • 1 lb Italian sausage
  • 1 small onion, chopped
  • 2 cloves garlic (or 1 Tbsp jarlic)
  • 6 cups chicken broth (¼ cup chicken base + 6 cups water)
  • 1 Tbsp basil
  • 1 tsp oregano (or 2–3 tsp Italian seasoning)
  • 1 (28 oz) can petite diced tomatoes
  • 2 carrots, grated
  • 1 cup frozen peas
  • 12–14 oz ravioli or tortellini
  • 1 cup heavy cream or half-and-half

Instructions

  1. Brown sausage (leave chunky). Drain grease.
  2. Add onion + garlic, sauté 5 min.
  3. Add broth, tomatoes, carrots, and herbs.
  4. Bring to a boil, then simmer 15 min.
  5. Add peas + ravioli, cook 5–8 min.
  6. Stir in cream and simmer a few minutes more.
  7. Serve hot with parmesan + crusty bread.
