SB's Spinach - Feta - Egg white Wrap (Copycat)

Ingredients

  • 1 9-ounce package Lavash flat bread
  • 1 ½ Cup liquid egg whites
  • 12-ounce frozen chopped spinach (thawed)
  • 9-ounce jar tomato bruschetta, in olive oil with garlic & basil
  • 8-ounce feta cheese crumbles
  • Salt & Pepper to taste

Instructions

  1. Spray or lightly oil your cast iron skillet.
  2. Make an accordion type of fan with the flat bread and place inside the pan, repeating with all four flat breads.
  3. Thaw and drain the spinach and toss with bruschetta.
  4. Stuff the flatbread with spinach mix, feta cheese and pour egg whites over the top.
  5. Bake at 350 for 30 to 40 minutes until egg whites are solid.
  6. I covered it for the last 10 minutes, so it didn’t get too crunchy.
  7. Cool completely before slicing!
