SB's Spinach - Feta - Egg white Wrap (Copycat)

Ingredients
- 1 9-ounce package Lavash flat bread
- 1 ½ Cup liquid egg whites
- 12-ounce frozen chopped spinach (thawed)
- 9-ounce jar tomato bruschetta, in olive oil with garlic & basil
- 8-ounce feta cheese crumbles
- Salt & Pepper to taste
Instructions
- Spray or lightly oil your cast iron skillet.
- Make an accordion type of fan with the flat bread and place inside the pan, repeating with all four flat breads.
- Thaw and drain the spinach and toss with bruschetta.
- Stuff the flatbread with spinach mix, feta cheese and pour egg whites over the top.
- Bake at 350 for 30 to 40 minutes until egg whites are solid.
- I covered it for the last 10 minutes, so it didn’t get too crunchy.
- Cool completely before slicing!
