Peach Bellini Blondie

Ingredients
- 1 cup melted butter
- 1 1/4 cups brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla bean paste
- 2 to 3 tablespoons peach sparkling cider reduction (from reducing 1 cup cider to about 1/3 cup)
- 2 cups all-purpose flour
- 1 to 2 tablespoons peach gelatin powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup white chocolate chips (optional)
- 1/2 to 3/4 cup diced frozen peaches, patted dry and tossed with 1 to 2 teaspoons flour
Peach Swirl
- 1 to 1 1/2 cups chopped frozen peaches
- 2 to 4 tablespoons sugar
- 1 teaspoon lemon juice
- 2 to 3 tablespoons peach sparkling cider (optional)
Peach Glaze
- 1 cup powdered sugar
- 1 to 2 tablespoons peach cider reduction
- 1 tablespoon peach purée or cooled peach swirl (optional)
Instructions
- Reduce the peach sparkling cider by simmering 1 cup until it becomes thick and syrupy and measures about 1/3 cup. Let cool.
- Make the peach swirl by cooking the chopped frozen peaches with sugar, lemon juice, and optional peach cider until thick like jam. Cool completely.
- Prepare the folded peaches by letting them thaw slightly, patting them very dry, dicing small, and tossing with a little flour.
- Whisk together the melted butter, brown sugar, granulated sugar, eggs, vanilla bean paste, and 2 to 3 tablespoons of the cider reduction.
- Mix the flour, peach gelatin powder, baking powder, and salt. Add the dry mixture to the wet ingredients and stir until just combined. Fold in white chocolate chips and the diced peaches.
- Spread the batter into a parchment-lined 8x8 or 9x9 pan. Spoon the peach swirl over the top and gently marble it with a knife.
- Bake at 325°F for 35 to 45 minutes, or until the center is just set and the edges are lightly golden. Cool completely before slicing.
- For the optional glaze, whisk together the powdered sugar, peach cider reduction, and optional peach swirl until smooth and drizzle over the cooled blondies.
